Cheese-making has been a lifelong dream of Margaret’s that became fulfilled in the early 1990’s. Her family farm had raised a herd of Holstein cows for many years, and shortly after starting a cheese making supply company, they added on a small dairy to their operations – just across the street from the farm!
Both Margaret and Wilma have spent years making cheese, with Margaret travelling to Europe to learn more techniques. That’s why they chose to utilize European style aging rooms. Though most of their rich cheeses are made with cow’s milk, they’ve also begun experimenting with cheeses made with goat’s milk.
