Woolley's lambs are pastured lamb.
Woolley’s lambs are locally bred, born, raised and butchered. Carrie Woolley is a sixth generation farmer who studied Animal Sciences at Guelph. Carrie and her husband, Brett Schuyler, own and operate Woolley's Lamb, as well as a fruit orchard and are part of Norfolk Fruit Grower's Association (who we also work with!).
Carrie and Brett began raising lambs five years ago and are very conscious of raising lambs in the most healthy and sustainable way. The lambs are born in the spring, where they graze on lush pastures and in the fall, are turned out to roam freely around the orchards - so they are completely grass fed and pasture raised for their whole lives. They are taken to be butchered and processed in the fall, with the rest frozen for a year-round local lamb supply with consistent prices.
